This particular Robiola is comparable to Taleggio, as it is a washed-rind pasteurized cow?s milk cheese. The presence of mold on the rind is a sign of healthy cheese. Ambrogio, the cheesemaker, really shows his talent by producing the Robiola di Bosco.
