Original product of The Hualdo Farm in Toledo, Spain. The cheese is made from the milk of Manchega sheeps, the natives of the area. The sheeps graze on open fields and are fed by what is produced on the farm itself, such as winter cereals and corn. This is essential to produce quality milk, rich in nuances and nutritional components and therefore, key to providing cheeses with excellent aromas and complexity. The color of the paste evolves from ivory to ocher tones as it matures, and the holes are small and well distributed. The more lactic aromas give way to the aromas of ripe fruit. Approximate weight: 3kg/ 200g wedges. Minimum ripening: 7 months. Shelf life: 12 months from packing.
