Pecorino Foglie di Noce, literally translated as Pecorino Aged in Walnut Leaves, is a delicious sheep's milk cheese from Italy. This farmhouse sheep?s milk cheese from Romagna has been aged in fresh green walnut leaves in ventilated caves to give it a particular perfume and flavor. It is rubbed daily with olive oil, to yield a subtle earthiness and herbaceousness to the cheese. When they are removed from the caves, the mottled cheese wheels reveal the aroma of walnut leaves. Walnut leaves ripen only twice a year thus both production and availability are limited. Wonderful paired with artichokes and raw vegetables. 2/3#
