This 30-40 day aged DOP cow?s milk cheese is produced in the provinces of Vicenza, Trento, Padova and Treviso. Traditionally, it was made from sheep's milk but today it is produced from unpasteurised cow's milk. There are two types of Asiago: This Fresh Asiago has a smooth texture while the aged Asiago (Asiago d'allevo) has a crumbly texture. The cheese is white or straw yellow in color with small to medium sized holes.
