To make a good ham, the quality of the raw material, slow air-drying, and the use of little selt are essential. Respecting these principles, our ham Legado de Liedos is the smallest and less fatty ham produced in Monte Nevado. Therefore, it needs less curing time: a minimum of 15 months for the smaller ones, but an average of over 17 months. Monte Nevado is a family company that was founded in 1898. Over this long history they have perfected their craft, creating a top quality Serrano ham with balanced curing and excellent marbling. Jam¢n Serrano literally means 'Mountain Ham'. Monte Nevado is a member of the Consorcium of Jam¢n Serrano which guarantees the quality of each ham. These hams were cured for well over a year, after which the bone is removed. The careful oversight of the Monte Nevado ham master means that each Jam¢n is cured long enough for a consistent, firm texture and full ham flavor. You can slice your Monte Nevado ham in a mechanical slicer - we recommend you slice it well chilled for consistent results. You can also cut your ham into pieces to share with friends or store for future use. Remember to always keep your boneless ham in the refrigerator.
