In selecting our Manchego Mitica® 1 Year, we tasted dozens of samples before finding our favorite version, made by the Corcuera family outside of Toledo, Spain. Manchego is a DOP cheese, which can be made only from the milk of the Manchega sheep that graze in the provinces of Albacete, Ciudad Real, Cuenca and Toledo, all of which form the region of La Mancha. The best cheese is produced when the milk is the richest, between August and December. The pattern on the rind honors a time when the cheese was wrapped in sheets of woven esparto grass. The Corcuera family was the first in all of Castilla La Mancha to make and commercialize Manchego cheese. This excellent Manchego cheese is produced with raw milk and aged one year. The producer of this cheese has won countless awards for their expertly aged cheeses. Manchego Mitica® DOP exemplifies the best of its kind, with buttery, lactic, and deeply complex flavors.
After one year of aging, rich nutty and toasty flavors develop with notes of salted caramel.
Traditionally paired with membrillo and Rioja. Excellent with fig jam, or shaved for any number of culinary uses.
