This buttery, soft cow’s milk blue cheese is produced in Novara with morning and evening milk. Our cheese is creamy, flavorful and masterfully consistent. As dolce is Italian for sweet, this is milder than Gorgonzola Piccante. It is a higher moisture blue with less veining and a sweet delicate flavor.
Today, Gorgonzola is made under strict regulation by around 40 small family dairies and large factories. A few artisan cheesemakers still use unpasteurized milk and follow the traditional "two day curd" method, allowing the curd to become naturraly inoculated by mold, then mixing it with the curd from the morning milking.
It is cut in quarters, wrapped in foil, and packed in plastic containers to protect it from crushing. 4/3#
Gorgonzola is famous for its creamy softness and really strong flavor. The uneven and erratically spread streaks and patches of blue mold impart a sharp, spicy flavor to the rich, creamy cheese. It tastes creamier and sweeter than Stilton, but similar in strengh.
We recommend it on pizza, gnocchi, raw or coocked vegetables or with a glass of sweet wine, robust red or even a rose. Dollop it onto thick wedges of walnut loaf or stir it into steaming pasta with a little cream or mascarpone and toasted pinenuts.
