La Peral, a single producer blue, hails from the remote area of Asturias in the north of Spain. Wedged between the ocean and the mountains, this is a less well travelled area of Spain in which the traditions of yesterday are largely intact. La Peral is produced by León Alvarez in the village of the same name.
Made from cow’s milk, this small format blue has a full-bodied taste which is a testament to the high quality of milk he uses. Aging is at least 60-80 days, but sometimes it is up to 4 or more months.
The flavor is unique - creamy and subtly sweet, with a tanginess all its own. It is a little lighter on the plate than some of the more famous blue cheeses from the area.
It pairs sublimely with Sherry, as well as a wide range of white wine.
