The Pesto alla Genovese is a traditional sauce from Ligure, Italy, and it is a staple on the tables of Italian families. It is made with sweet basil, olive oil, pine nuts and pecorino cheese. The secret to use it is to dissolve it in hot water (1 tablespoon water per 2 tbsp. of pesto) and then add some more good olive oil to give it the right consistency.

The most traditional way to pair it is with any dry or fresh pasta, but it is also wonderful in risotto, as a base or topping in pizzas, for soups and salads, and to add fragrance to sauces and marinades.
