Murcia is famous for its quality goat?s milk, and Montesinos produces outstanding goat cheeses. Ca¤a de Cabra is a soft-ripened goat cheese log from Murcia, much like the French Bucheron. It is creamy and mild. Aged 21 days, MitiCa¤a? de Cabra is buttery and delicious. As it ages, the flavor intensifies.
This creamy, buttery, mild and delicious cheese has a bloomy rind with semi-soft texture. When young, the cheese is mild and creamy. It becomes drier in the paste and more intense and mouth filling with age.
This cheese is excellent crumbled into salads, but truly shines when served on a cheese plate paired with fresh fruit, honey, almonds and fig spread. It also pairs well with a crisp white wine.
