Description

This 60-day aged raw cow's milk Toma is produced with thistle flower. The name – literally small mountain shepherd in Occitan – pays tribute to Nonno Magno, Mario Fiandino’s grandfather. Soft and delicate, Lou Bergier is a semi-soft open textured cheese with a pale yellow velvety paste and mottled brown and grey rind.
The cheese has a delicate aroma with a full flavored creaminess. Refreshing and delicious.
