This smoked cow’s milk cheese comes from Juan Carlos, the famous cheesemaker behind Tres Leches. He and Maria Carmen started the dairy 25 years ago when they fell in love with the Picos de Europa and decided to live there but had to figure out how to earn a living.  Juan Carlos learned cheesemaking from the Monks in Cobreces (Cantabria) a famous cheesemaking area.  It’s a family dairy, husband and wife and one other employee with their 19 year old son helping out on holidays.
In Cantabria, cheese is called Quesuco and this one is exceptional. The cheese is smoked for 24-36 hours on juniper wood, a tradition dating back to when the cheese was made in the mountains after the cows finished grazing in the grassy patches. The intense juniper is perfect for giving a wonderfully subtle smoky flavor to the cheese.


Tasting Note

Perfectly balanced notes of smoke and freshly cultured butter. Perfectly balanced notes of smike and freshly cultured butter, also very pleasant smooth, it is a excellent introduction for smoked cheese.

Food Paring

This claccic cheese is recommended with spicy chorizo and grilled bread.
