Semi-soft cow?s milk, pudgy straw-colored round with a smooth, creamy interior. Often referred to as Queixo do Pays, or cheese of the land, Arz£a Ulloa is of one Galicia?s trademark cheeses. Similar to Tetilla, it is made with milk collected from cows (typically the Rubia Gallega breed) that graze on the lush green pastures that blanket much of this northwestern part of Spain. Aged for only a couple of weeks, the cheese retains much of the acidic, buttery flavors of fresh milk. Combined with its unctuous texture, it is a simple yet deeply pleasing cheese to enjoy. It has been recognized by Slow Food?s Ark of Taste for its traditional production.

Overall mild, though there are buttery, acidic notes that become more pronounced with aging.
Though it melts well, Arz£a may be best enjoyed with fresh, crusty bread and slices of membrillo. Pair with a crisp, flowery white such as Albari¤o.
