A soft-ripened, bloomy rind cheese with a distinct similarity to Stracchino, Casatica® highlights the characteristics of buffalo milk. Bruno and Alfio of Quattro Portoni chose the shape and size so the cheese would have a better shelf life. It maintains the correct amount of humidity and aids the development of the white mold, which contributes to the cheese’s beautiful appearance and delicate flavor. The name comes from one of the four entrances to their town, Cologno al Serio. The cheese oozes when you cut into it and is milky and creamy with a sweet finish ? it’s just heaven!
Casatica di Bufala is made in traditional Bergamo style, with a white mold rind. Made with only 100% buffalo milk. 3/2#
Soft-Ripened. Sweet, delicate, and creamy with a distinct earthiness and slight tang in the finish.
A delicious table cheese. Serve with raw Italian Cherry Honey, fruit, and nuts. Pairs well with Prosecco or Witbier.
