A cheese with nearly 700 years of history, Queso Camerano is made in the Sierra de Cameros in La Rioja, Spain.
Jesús Martinez and his wife Justa founded their creamery in 1961 in the heart of La Rioja. Their four children now run the business, collecting milk from 11 local farms for their Queso Camerano. The goats graze throughout the year, except during kidding season. 80% of their diet comes from grazing. The cheese earned DOP status in 2009 and just two creameries make the cheese.
Relatively obscure DOP cheese from the heart of one of Spain’s most beloved wine countries, La Rioja. Small format cheese with characteristic ridged basket rind rubbed in olive oil.
Keep cool when not in use. If additional mold grows on the rind, it can be wiped off with a damp cloth. Bring to room temperature before sampling.
Intense aroma of damp cave. Paste is earthy, herbal, and slightly lactic.
Goes superbly with caramelized onions or onion jam. Pair with a young Rioja Blanco wine.
Pasteurized Goat’s Milk, Cheese Cultures, Rennet, Lysozyme (from egg white), Salt. Goat Rennet. Cheese cured in olive oil.
