Ocal is a rare Olive tree variety that grows in the interior valleys of South Andalucia, where never freeze in winter. Olives from this variety are big like small plums. The Oil needs to be extracted at cold temperatures (19oC) to get a quality oil.

It is a 2014/15 Extra Virgin Olive Oil, cold extracted in about 60 minutes since the olive was picked from the tree. The result is a high quality, extremely mild and fresh extra virgin olive oil. It is very aromatic and with a high resistance to oxidation due to a very low level of peroxide. This oil is produced by Valderrama in its farm at Montilla, Cordoba.

A very smooth oil, with an olive flavour and light bitterness.
Perfect for baking, pastry and sous-vide cooking at low temperatures.
