This blue cheese is made deep in the Picos de Europa, in a region of the northwestern Spain, just outside of the province of León. It is produced with a mixture of cow and goat’s milk, Valdeón is sought after because it is milder than DOP Cabrales and is still characteristically wrapped in leaves which make for an appealing presentation.
Queso di Valdeon has been awarded a status of Protected Geographical Indication (PGI) to regulate the production, processing and preparation of the cheese. In 2005, the the Ministry of Agriculture, Fisheries and Food granted the cheese an award for best Blue Veined Spanish Cheese.

It has an excellent balance of sweet and tangy, with a nice earthiness at the finish. It's a bolt and salty cheese.
The rich smell of the cheese makes a good company with fresh fruit and strong red wine or sherry. A powerful smelling cheese, Valendon greasy, buttery paste is perfect for preparing any kind of blue cheese sauce.
pasteurized cow's & goat's milk, rennet, cheese cultures, salt, penicillium roqueforti
