This is a washed-rind cow’s milk cheese characterized by a reddish brown, mold-marbled rind. In the heart of Valtaleggio, Ambrogio, our producer, has been making farmhouse Taleggio for generations and ripening it naturally. We import the cheese with a slightly thicker rind than usual in order to protect the cheese and prolong its shelf life. 2/5#.
The cheese has a strong smell, but its taste is relatively mild with an unusual fruity tang. The molds and yeasts of the rind speed up the breakdown of the curd, ripening it from the outside towards the center.
When grated on salads such as radicchio and rucola. It is a sxcellent table cheese, it can be eaten as is or used in various recipes because it melts so readilty.Taleggio can be served with Italian Nebbiolo wines, and also a wide range of Reds and Whites.
