Lovely caramel colored with a golden interior and tiny eyes, San Simon is a smoked cow’s milk cheese from Galicia in the shape of a teardrop with a small nipple. The subtle smoked flavor comes from aging the cheese on birch wood. Only four producers make the cheese; this one is artisanal.
The smoky taste blends elegantly with the buttery aroma and taste, while the overall flavor is mild with some salt, a pleasant balance of acitiy, and sweetness in the aftertaste.
A good melting cheese, this works well in rice, pasta, and vegetable dishes, or added to salads. Delicious with a glass of a young red Valdeorras wine and some peanuts.
Pasteurized cow's milk, rennet, cheese cultures, salt, calcium chloride and lysozyme (from egg).
