This natural rind cow’s milk cheese from the province of Cuneo has a smooth, sweet flavor and is a semi-firm, raw, pressed, cow’s milk cheese. Raschera is generally aged for about 90-100 days. The texture is consistent, elastic, with small irregular holes dotted throughout the cheese. The color is white or ivory. The appearance is a pressed curd with a semi hard white to yellowish paste. Made from cow’s milk from two milking (morning and evening). Very little makes its way out of Italy so this is a real treat for any cheese plate. The name originates from a lake in the area. 1/20# -
It has a fine and delicate flavor, slightly spicy and salty if well matured. The texture is consistent, elastic, with small irregular holes dotted throughout the cheese.
Ideal table cheese, it is also recommended for various dishes, for example melted in risottos, vegetables and special dishes or diced in salads.
