Pecorino Foglie di Noce, literally translated as Pecorino Aged in Walnut Leaves, is a delicious sheep's milk cheese from Italy. This farmhouse sheep’s milk cheese from Romagna has been aged in fresh green walnut leaves in ventilated caves to give it a particular perfume and flavor. It is rubbed daily with olive oil, to yield a subtle earthiness and herbaceousness to the cheese. When they are removed from the caves, the mottled cheese wheels reveal the aroma of walnut leaves.
Walnut leaves ripen only twice a year thus both production and availability are limited. Wonderful paired with artichokes and raw vegetables. 2/3#
The taste of the compact and dense dough is now sweet and intense, becoming rich and buttery with intense ageing. It has a earthy, herbal aroma and a buttery, nutty flavor.
It pairs nicely with Nero d’Avola, Sauvignon Blancs or any Italian red or dry white wines. In the kitchen, this cheese tastes wonderful with artichokes and raw vegetables.
pasteurized sheep's milk, rennet, salt
