An exemplary sheep?s milk cheese produced in the Val D?Orcia (Siena) under strict supervision of the Consortium of Pecorino Toscano. The 6 month Aged version is firm, rich and nutty with a lingering finish hinting of butterscotch. 2/5#. We also carry a younger, semisoft Fresh version aged about 20-30 days. Mild and fruity, it has a great texture for melting. Shaved over arugula salads, with fruit, or on its own, for fondue, in a cheese sauce, or simply as a snack ? the possibilities are endless

It is very versatile. This cheese can be used in almost any meal- shaved, shredded, for cooking, or cubed for salads. Sheep milk more easily digestible than cow's milk cheeses. More flavor - less cheese needed. No BST.
