?Pocha beans? are a variety of early white beans that are consumed before their maturity. Pochas are white kidney or cranberry-shaped beans with a smooth flavor and common in the Basque region of Spain as well as Navarra and Rioja. In Spanish, the word pocha means pale, and these beans are often picked just before or just as they ripen. As a result, some may even seem slightly green. It is a prized dish that gives rise to fraud and imitation. The authentic ?Pochas? are superior in quality and taste, being the yellowish-green color and a larger size what differentiates them. Recipe: In a saucepan with olive oil saute a green pepper, a tomato, half a chopped onion, and one one chopped garlic globe. Once cooked add the "pochas" and half a glass of water and leave to boil for 5 minutes. // onions, olive oil, garlic, salt, pepper, tomato, lemon, jalapeno, cilantro, huevos rancheros con setas y pochas.
