This semi-hard sheep’s milk cheese from Sardegna is made in the style of Fiore Sardo. Since the island has more sheep than people, its inhabitants were traditionally shepherds with generations of cheesemaking experience. The producer of MiticaSardo has been making cheese since 1962. Nutty and a bit sharp with a great depth of flavor, MiticaSardo maintains its moistness although aged 8 months.
It is wonderfully rich in flavour, with caramel sweetness, salty tang and a hint of fruit. The spicy flavour of the cheese intensifies depending on the length of maturation.
Less aged cheese pairs well with young red wines such as Cannonau di Sardegna DOC, while matured version could be served with Malvasia di Bosa or Moscato di Sorso Sennori.
