La Peral, a single producer blue, hails from the remote area of Asturias in the north of Spain. Wedged between the ocean and the mountains, this is a less well travelled area of Spain in which the traditions of yesterday are largely intact. La Peral is produced by Le¢n Alvarez in the village of the same name.
Made from cow?s milk, this small format blue has a full-bodied taste which is a testament to the high quality of milk he uses. Aging is at least 60-80 days, but sometimes it is up to 4 or more months.

The flavor is unique - creamy and subtly sweet, with a tanginess all its own. It is a little lighter on the plate than some of the more famous blue cheeses from the area.
It pairs sublimely with Sherry, as well as a wide range of white wine.
Pasteurized cow's milk, salt, rennet, lactic ferments, stabilizer (E 509), calcium chloride and penicillium.
