From the same producer as our D.O.P Idiazabal, Etxegarai is an unpasteurized sheep?s milk cheese aged 6 months and smoked over Hawthorne and Cherry woods; it is full flavored with a pronounced sheepy finish due to the raw milk. Made with milk from the Latxa sheep, Carranzana, and other breeds in the Basque Country and Navarre.
